Rice upma/arisi upma as it is popularly called is a popular tiffin in south india particularly Tamilnadu, Kerala, andhra.......It is a tiffin prepared for dinner during amavasya(new moon day).....
Ingredients Needed :
Long grain rice - 2 cups
Red gram(Thuvaraparippu) - 1 tsp
Black pepper - 1 tsp
Cumin seeds(Jeerakam) - 1 tsp
Oil - 1/4 cup
Mustard seeds - 1 tsp
Black gram(Uzhunnuparippu) - 2 tsp
Bengal gram(Kadalaparippu) - 2 tsp
Dry red chillies(Kollamulaku) - 2 nos
Salt - 1 tsp
Curry leaves - 4 - 5 nos
Asafoetida(Kaayam) - A pinch
Method Of Preparation :
1)Grind the rice, red gram, black pepper and cumin seeds into a course mixture.
2)Heat oil in a pan.
3)Add mustard seeds.
4)When the seeds pop add red gram, Bengal gram and black gram.
5)When they turn golden brown, add 3 cups of water.
6)When it boils, add the salt, asafoetida and curry leaves.
7)To this, add the ground mixture of rice, cumin seeds and black pepper.If using a pressure cooker, allow the mixture to cook until the first whistle.
8)Stir it continuously until the mixture thickens and the rice is cooked.
9)Close the mixture with a lid on low heat
