Healthy Muffins/Fruit Muffin is a great breakfast dish. It is a oat rich food.Oat is a fibrous cereal that can be used to lower the cholestrol content in our body.It is a delicious recipe that can be tried even by diabetic patients.This muffin can be prepared with fruits like - blueberry, blackberry, strawberry, rasp berry etc.
We can use mixed fruit muffin wherein we use combination of all these fruits.
Ingredients Needed :
1) Oats/Quaker oats - 2cup
2) Whole wheat flour/wheat floue/flour used for making chapathi popularly called as wheat atta - 2 cup
3) Maida/whole purpose flour - 1cup
4) Berry fruits mentioned above/combination of all the fruits - 2 cup
5) Sugar - little to taste
6) Salt - as needed
7) Milk - 2cup Milk is used to prepare batter. So quantity of milk needs to be determined depending on the batter texture. Don't make it too liquid.
8) Cinnamon powder - 1/2 tsp
9) Walnut - as needed
Method of preparation :
1) Soak oats in milk for 1 hour
2) Milk all purpose flour/maida, whole wheat floe to the milk
3) Add salt, sugar and some water (if needed). We can also use brown sugar instead of sugar
4) Bring it to idli batter consistency
5) Pour the batter in muffin baking tray. This is a tray available in supremarkets like Walmart, Meijer,Kroggers. Muffin baking tray is available in baking section.
6) Pour half the tray with batter. Sprinkle fruits
7) Sandwich the fruits by pouring another layer of water
8) Sprinkle some cinnamon and walnuts
9) Heat in oven at 400F for 15 - 20 minutes
Serving : 12 muffins
The batter will be good for 10 days and can be refirgerated and used accordingly.
