Beinjal also called as egg plant is a popular vegetable in south india.Brinjal barbecue is the brinjal fried in flame and served as a side dish. This is the best sidedish when served alongside rasam rice(lentil soup rice).
Ingredients Needed :
Beinjal (big one) -1
Green chillies - 4
Urad dhal - 1 tsp
mustard - 1/4 tsp
asafoetida - 1/4 tsp
curry leaves - 1 strand
corriander leaves - finely chopped for garnishing
onions finely chopped - optional
Tamarind extract - 1/4 tsp
Salt - as needed
oil - coconut oil, vegetable oil, canola oil (anything will do)
Method of Preparation :
1) Coat a layer of oil in brinjal and roast the brinjal in stove flame. Rotate brinjal and make sure that the skin turns black and it is well cooked. Make sure it is not over burnt
2) Heat oil in a pan. Add mustard, urad dhal, curry leaves, chopped green chillies, asafoetida, salt and mix well
3) Now remove the cooked brinjal flesh portion by dipping roasted brinjal in water that seperates the skin
4) Add this to garnishing,add 1/4 tsp of tamarind extract
5) Add salt, sprinkle corriander leaves and serve hot
It is optional to sprinkle onion and serve with rotis. This forms best side dish alongside rice, rotis
