Tindora Fry, Dondakkai Fry, kovaikai Fry is a popular andhra dish which is really exotic.Tindora is a common fruit/vegetables and has great nutritional value.
Ingredients Needed :
Tindora - 30 pieces/ 1 kg
Coconut - powdered form - 1 cup
Mustard - 1/2 tsp
Urud Dhal/ Ulutham paruppu - 1/2 tsp
Cumin seeds/jeeragam - 1/2 tsp
Red chillies - 2
Turmeric powder - pinch
Red chilli powder - 1/2 tsp
salt - as needed
oil - as needed
cashewnuts - 1tsp
Hing/asafoetida - as needed
Method of preparation :
1) Heat oil in a pan. Add red chillies. Once the oil becomes hot add some mustard.
2) Once the mustard sputters, add cumin seeds/jeeragam and fry. Add hing/asafoetida
3) Add pinch of turmeric
4) Add urud dhal and fry it
5) Add few cashewnuts
6) Add coconut adn fry brown
7) Add red chilli powder and some salt to taste
8) Meanwhile slit tindora/dondakkai/kovaokai lengthwise and fry in oil. Deep fry tindora.
9) Add fried tindora to this coconut mixture.
10) Add chopped green corriander leaves (pachai kothamalli) and serve hot
Note : We can fry tindora first and keep aside before preparing the coconut garnishing.
This can be served as a sidedish alongside rice, variety rice like lemon rice, tamarind rice/pulliyodharai etc.
