Ginger Candy, Ingimuttai is popular among the bus travellers. It is sold at bus stations and is considered to alleviate the nostalgia/nauseating problems associated with travel. Apart from this ginger has amazing digestion powers and can be added to food on a regular basis.
Here is the recipe for preparing ginger candy, ingimuttai,ingimittai (ingi - ginger; mittai/muttai - candy) as it is called popularly in south india.
Ingredients Needed :
1) Ginger Finely chopped - 1 cup
2) Sugar - 1/2 cups. Sugar can be cane sugar, brown sugar (called as karuppati/karupatti, panaivellam - very good for health)
3) Water - 2 cups
Method of preparation :
1) Boil the chopped ginger for 15 minutes to make it soft. Strain the ginger
2) To the boiled ginger add 1/2 cup of sugar and 2 cups of water and boil the mixture
3) Simmer until the water evaporates completely
4) After the water evaporates fully and the sugar gets stuck to the ginger pieces, take them out and dry them
