Mixed Vegetable Curry is a great sidedish for rotis like chapathis, pooris
Ingredients Needed :
Onion (big) -1
Tomatoes (big) - 1
Beans - 1/4 cup
Peas - 1/2 cup
Carrot - 3
Green chillies - 3
Besan flour - 2tsp
Red chilli powder - as required
salt - as required
Corriander powder - 1/2tsp
Curry leaves - as required
Corriander leaves - as required
Mustard seeds - 1/2tsp
Cumin seeds/jeers - 1tsp
Turmeric - as required
Garlic (crushed) - 2
Method Of Preparation :
1) Cut the above vegetables into small fine pieces
2) Add oil in a pan and add cuminseeds, mustard. When mustard splutters add curry leaves, onion, greenchillies, crushed garlic,turmeric. Fry it until onion turns golden brown
3) Add the cut vegetables, red chilli powder, salt to taste and do deep fry for 10 more minutes
4) Add 3/4cup of water to besan flour. Add the liquid besan to vegetables
5) Mix well. Cook for 5 more minutes
6) Add corriander leaves
Serve alongside rotis, rice
