Today I prepared paruppu tomato rasama dn was looking for a different potato dish other than typical curry, fry. I stumbled upon an interesting potato dish called potato sambhal. It is an exquisite dish from chettinad the food heaven of tamilnadu south. Here is the interesting delicious recipe for making your potato sambhal today
Ingredients Needed :
Potato - 4 or 5 - dice it, half-cook by adding pinch of salt and turmeric
Oil - as needed
Onion - 2
REd chillies - 10 or 15 depending on spice level - soak in cold water for 15 to 30 mins
garlic - 4 cloves
curry leaves - as needed
coconut water - crush coconut with little water and filter it. The first layer is to be used for best taste
Method of preparaation :
1) Deep fry half-boild potato in oil
2) Crush red chillies and garlic and make it a fine paste
3) In a pan add oil, pour red chillie mix and cook well
4) Add onion and deep fry this
5) Add salt and curry leaves, mix well
6) Add coconut water and mix well until this mixture turns semi-solid
7) Now add potatoes , salt , asafoetida, curry leaves and fry well
8) It is optional to add a pinch of jaggery if needed
Serve hot alongside rice and rice varieties
