I cut ladies finger today morning and was thinking about making a different kuzhambu recipe with ladies finger. All these days I've tried preparing vathakuzhambu, milagai/chilli kuzhambu using ladies finger. As a difference I prepared Karakuzhambu using ladies finger today. We can replace ladies finger with brinjal in this same recipe
Ingredients Needed:
Ladies finger/Brinjal - As needed. cut into large pieces (or) slit into large pieces
Tamarind juice - lemon size as needed
Salt - as needed
Asafoetida - as needed
curry leaves - strand of leaves
Gingely oil - This gives best aroma
Green chillies - 3 or 4 as per taste
Onion - 1 onion slit into pieces
Tomato - 2 cut into pieces
Salt - As neded
Red chilli powder - 1.5tsp
Method Of Preparation:
1) Heat oil in a pan
2) Add green chillies, onion, curry leaves and fry well. Deep fry gives best taste
3) Add tomatoes and mix well
4) Cook until oil oozes out
5) Add ladies finger/brinjal and cook well
6) After few minutes add salt, red chilli powder
7) Add tamarind juice and mix well
Serve hot with white rice
