Sweet Pumpkin Squash Chakkarai Posanikkai Vathal Kuzhambu

Sweet Pumpkin/Chakkarai Poosanikkai Vathal Kuzhambu is an interesting south indian recipie that can be served hot with boiled rice. Sweet pumpkin is a form of squash that is easily available and very cheap in south india. When we prepare kuzhambu (soup) with sweet pumpkin the spicy flavour along with sweet pumpkin gives an extrodinary taste.This can be served alongside rice and can also be used with pongal, upma, kichadi, idli, dosa/dosai etc
Ingredients Needed :
Sweet pumpkin/chakkarai poosanikkai (finely Diced) - 1 cup
Salt - as needed
Oil/vegetable oil/canola oil/corn oil - as needed
Tamarind - as needed
Green chillies - 5
Sambar powder - 2tsp
Fenugeek seeds - 1tsp
Method of preparation :
1) Boil finely diced pumpkin/sweet pumpkin/squash
2) Heat oil on skillet and add fenugeek seeds
3) Fry boiled pumpkin mixture
4) Fry curry leaves along with this mixture
5) Add tamarind water (Puli/Puzli thanni) and mix well
6) Add salt as needed and 2tsp of sambar powder
7) Add green chillies
8) Allow the mixture to boil until the quantity becomes half
9) Serve hot with rice
